Black Pepper & Chilli Squid:
Necessary Items:
Some nice, fresh squid. About 500g.
A significant number of black peppercorns, say, around 30?
2 or 3 hot fresh red chillies
A handful of fresh coriander
A wedge of lime. Or lemming.
1/2 teaspoon of coarse sea salt (or a bit more or a bit less)
2 tablespoons of peanut oil
How to do it:
Firstly, repeat after me - "Octopus is not squid". Right. Now we're ready.
Clean the squiddies and slice into strips.
Crush the peppercorns using a pestle and mortar. Or mill 'em. Whatever.
Finely chop the chillies.
Combine squid, salt, pepper and chillies in a mixing bowl.
Stick said bowl in the fridge for an hour or so, covered.
In a heavy pan, heat the oil until just about smoking, or, if you don’t smoke, for about 2 minutes.
Throw the squiddy mixture into the pan and stir fry for about 42 ½ seconds.
Take the pan off the heat and stir in the coriander.
Garnish with the lime wedge and serve immediately. If not sooner.
