Rev. Peanut's Some Dried Tomatoes
Some Dried Tomatoes:
Necessary Items:
10 kg plum tomatoes
Coarse sea salt
Some chillies
Capers
Flat leaf parsley
Black peppercorns
Olive Oil
Sun
A couple of months
How to do it:
Day 1 - slice the tomatoes in two lengthways and arrange on a wooden board or a wire rack or something. Sprinkle with the salt – not too much, mind you, stick them out in the sun and relax with a gin and tonic. At night, take them indoors. Have a glass of wine.
Day 2 – put them back out in the sun. Observe them secretly from behind a gin and tonic. Again, at night, bring them in and replenish the wine glass.
Days 3 &4 – same as day 2.
Day 5 – should be starting to dry out. Purchase a new bottle of gin.
Day 6 – should be nicely shrivelled. Turn the feckers over.
Day 7 – same as day 6.
Day 8 – same as day 7.
Day 9 – when you’re sure they contain no more moisture, squeeze them into a jar with loads of olive oil and layer them with your choice of flavourings, in this case chillies, parsley, black peppercorns, capers and fingers.
Fill the jar right up to the top with olive oil, making sure all the air is squeezed out. Put the lid on tightly and put in a cupboard for a couple of months. They’re ready to eat when you suddenly have the thought – “Didn’t I make some sun dried tomatoes a while ago”?
