Rev. Peanut’s Home Grown Hot Sauce:
Necessary Items:
200g Chillies. I use a variety of chillies. But don’t omit the Ghost!
This year I'll be using a very special guest - Carolina Reaper...
2 Medium Onions
3cm Fresh Root Ginger
4 Cloves Garlic
2 Teaspoon Mustard Powder
1 Teaspoon Dijon mustard
1/2 Cup Red Wine Vinegar
2 Tablespoons Balsamic Vinegar
1 Tablespoon Olive Oil
1 Cup Passata
Salt & Pepper to taste.
How to do it:
Roughly chop the chillies, onion, ginger and garlic and place all the pieces carefully, one by one, into an aptly named blender.
Add the mustard powder (Wasabi gives an extra little kick)
Add salt and pepper
Add all the wet stuff.
Put the lid on the blender. This is quite an important step, unless you are moving house the following day.
Blend for a couple of minutes at low speed, then high speed, then low speed again. This helps to relieve the boredom.
When blended, transfer into glass jars with air tight lids and stick ‘em in the fridge.
It takes about a week for the flavours to combine, so keep your grubby little fingers off it until then. Should last a few months unopened in the fridge. Difficult to eat it when it’s unopened though.
Delicious when smeared on a variety of items – grilled meat, fried egg sammiches, fingers, omelettes etc.
