Rev. Peanut's Chilli & Honey Brown Bread

Necessary Items:

200g of wholemeal flour. (This will in fact not be your whole meal. There will be other ingredients).

100g plain flour. (See? Told you).

A teaspoon of breadsoda and a teaspoon of salt. You may use the same teaspoon.

200ml, or so, of plain yoghurt. (I can't easily find buttermilk over here. Yoghurt do good).

A significant squeeze of local honey, if she's available and willing...

Half a teaspoon of crushed, dried chillies.

How to do it:

Preheat yer oven to about 220°C.

In a mixy bowl, mix up the flours, breadsoda, salt and chillies.

In another mixy bowl, mix together the yoghurt and honey.

Fold this into the dry ingredients in the first mixy bowl and get the beagle to lick the second mixy bowl clean.

Mix it to a soft dough. Don't over mix. Add more yoghurt if it's too dry. Or milk. You could use milk. Or lemon juice. Or both. Play around.

Plonk it into a greased baking tin, form it and cut a deep cross in it.

Stick it in the oven. After 10 mins, reduce the temperature to about 180°C and bake for a further 20 - 30 mins.

The easy way to see if it's ready is to tap the bottom of the tin with your finger. If it sounds hollow and your finger is reasonably burnt then it should be ready.

Leave it to cool for about 10 mins and then take it out of the tin. Wrap it in a clean, slightly damp tea-towel or an old pair of underpants or something and allow to cool completely.
