Tzatziki With A Twist:
Necessary Items:
½ litre of full fat, natural Greek yoghurt. Natural. Do not use strawberry or banana flavour. Unless you’re a freak, in which case - whatever floats your kayak.
1 cucumber
5 (yes 5) cloves of garlic. Or maybe 6
The juice of one large lemon
2 tablespoons of olive oil
1 or 2 green chillies
Salt and pepper
1 teaspoon of fresh dill, or fresh coriander, or fresh flat leaf parsley. Or none. It’s a recipe, not a bible.
How to do it:
Peel and finely chop the cucumber. Divide it into 2 equal portions.
Roughly chop the garlic and chilli.
Add ½ the cucumber to the garlic, chilli, herbs, salt and pepper and mix together in a mixing bowl.
Transfer into a blender and add the oil and lemon juice.
Blend for about 30 seconds.
While blending you will probably be thinking – “I didn’t need a mixing bowl at all. I could have just put everything in the blender”. You would be correct.
When blended, fold out into the dirty mixing bowl and add the 2nd ½ of the chopped cucumber and the yoghurt. Gently combine using a fork.
Do not blend the yoghurt or it will separate and become very runny. Yuck.
Grind some black pepper over it, cover with clingfilm and stick in the fridge for a couple of hours, or even better, until the next day before eating.
After eating, stand a good distance away from people you don’t know and try to avoid using words that begin with “H”, if engaged in conversation.
