Rev. Peanut's Octopus Salad
Octopus Salad:
Necessary items:
A fresh octopus or two
2 cloves of garlic
1 medium hot chilli
The juice of 1 lemon
A handful of flat leaf parsley
Some olive oil
Crushed black pepper
How to do it:
Plonk the octopus into a saucepan. Just the octopus. No water, no salt, nothing. Nada. Just the octopus. Got it? Good. You may continue.
Cover the saucepan and cook over a low heat for about an hour and a half, depending on the size of your octopus.
In the mean time, roughly chop the garlic and the parsley.
When the octopus is cooked, let it cool for about 20 minutes, then, cut it into bite sized pieces.
Mix together with the garlic, chilli, parsley, lemon juice, oil and pepper.
Munch, and enjoy immensely.
Goes particularly well with large quantities of wine.
