Rev. Peanut's Octopus Salad

Octopus Salad:

Necessary items:

A fresh octopus or two

2 cloves of garlic

1 medium hot chilli

The juice of 1 lemon

A handful of flat leaf parsley

Some olive oil

Crushed black pepper

How to do it:

  • Plonk the octopus into a saucepan. Just the octopus. No water, no salt, nothing. Nada. Just the octopus. Got it? Good. You may continue.

  • Cover the saucepan and cook over a low heat for about an hour and a half, depending on the size of your octopus.

  • In the mean time, roughly chop the garlic and the parsley.

  • When the octopus is cooked, let it cool for about 20 minutes, then, cut it into bite sized pieces.

  • Mix together with the garlic, chilli, parsley, lemon juice, oil and pepper.

  • Munch, and enjoy immensely.

  • Goes particularly well with large quantities of wine.
